Wow, been a crazy few days!

Thursday night…well, Friday morning…The Chad got a call from his parents at 3:30 a.m. Phone calls in the middle of the night are never good, and luckily, no one was hurt, but they had an awful bleach smell filling their house. It was so bad that it was burning their eyes, noses, and throats. The Chad ran out (they live 4 houses away) and opened up their windows and ran some fans, then got our guest bedroom ready for an overnight stay.

Yesterday, I woke up extra early to make a healthy burger option for Eat To Be Awesome class before I had to teach Pedal Power at 7:45. I chose to make a Quinoa Burger – though some sweet potato burger recipes were intriguing me on Pinterest…

The result? A very tasty entree! As we were sampling them in class, we talked about how they could be good for any meal of the day. They’re a great, protein-rich savory starter…a breakfast patty, if you will. But add a little salsa and plain Greek yogurt (as a sub for sour cream) and you have a delicious lunch or dinner.

So, to recap…I woke up early…had Pedal Power, Dumbbell Diva, Eat To Be Awesome…then it was time to decorate for our owner’s surprise 40th birthday party. ’80s style! You KNOW I was loving this!

PHEW! That was quite a day. Which brings us to this morning, where I introduced a new playlist and journey to the class. I was 2 students away from max. capacity, meaning my biggest class to date in Pedal Power! It was so fun to have a big group to motivate the workout, and made it easier to push through my drowsiness. Despite the a/c pumpin’ during class, this workout had me sweating up a storm! Plus, it’s a soupy hot day. Time to look for a friend with a pool who’s willing to have some guests over…
